The story of Italian “Sfogliatelle” goes that a nun in a convent along the Amalfi coast mixed some leftover semolina with sugar, dried fruit, and lemon liqueur. After kneading the dough into two sheets, she added the semolina mixture to the middle, which served as the filling. The pastry arrived in the city of Naples later in the 1800s, where, a well-known pastry shop transformed "sfogliatelle" into the current triangular lobster tail shape.
